Prior to the commercial application of freezing and refrigeration technologies, many people relied on dried and salted fish as an important food source. At one time, the catching and production of salt, or dried, cod was an important industry along the coast; as lobstering became in the late nineteenth, twentieth, and twenty-first centuries.
